Prima Vera Pasta ! from our Chef's CookBook


FETTUCINE ALFREDO

Straight from the kitchen of our Zimi Restaurant at the Aphrodite Hills Resort - why not try this delicious pasta recipe our Chef and his Team are delighted to share with you. 



Ingredients:
Tagliatelle Fresh pasta frozen 180g
Olive oil 30 ml 
Chopped onion 50g 
Garlic 1 head 
Chicken stripes 120g
Green asparagus tips Fresh, 15 Pieces 
White wine 20 ml 
Fresh cream 50 ml 
Parmesan flakes 10 grs
Salt & Pepper 

Procedure:
Heat a casserole with salted water and bring to boil. Add the pasta and cook for 4 minutes 
In a frying pan add the olive oil & heat. When hot enough add the onion, garlic & sauté to a light gold color, add the chicken strips and sauté for another minute.
Add the asparagus tips and deglaze with white wine.
When wine has reduced, add the fresh cream and simmer until it reaches a thick consistency. Season to taste 
Strain the pasta and add to the frying pan. 
Toss together and serve. 
Decorate with Parmesan flakes.
